Called 'Sichuan pepper' or 'Sichuan piri'; spiny plant with aromatic fruit. The dried peels are used as a spice; also used for aromatic and digestive oils. Uses in cooking Dried berries (kona-zanshō) as a condiment. Young leaves (kinome) for soups and pesto-type condiments. Unripe fruits boiled or pickled. Traditional properties Digestive, anti-inflammatory, pain-relieving, antibacterial, antioxidant. Cultivation Fertile and draining soil, exposure to sun or semi-shade. Also suitable for bonsai. The harvesting period for Zanthoxylum piperitum is in autumn when the fruits (berries) reach maturity.
