Edible leaves; used for desserts, infusions and relaxing aromatic oils. Bergamot mint (Mentha x piperita 'citrata') IN COOKING: Citrusy aromas for drinks, cocktails, desserts, savoury dishes. Relaxing, digestive, refreshing, oral hygiene properties. Ingredients for 4 persons 350 g spaghetti 400 g diced swordfish Mint to taste 1 clove of garlic 250 g cherry tomatoes Salt to taste Black pepper (or chilli pepper) to taste Evo oil 1 glass of white wine Procedure Sauté a clove of garlic in a frying pan with the oil. Add the washed cherry tomatoes cut into small pieces. Cut the swordfish into cubes and, as soon as the tomato has stewed, remove the clove of garlic from the pan and add the cubes, seasoning with salt. When the swordfish changes colour, deglaze with wine, add pepper or chilli and mint to taste. Bring the water to the boil and cook the spaghetti, taking care to drain them 2 minutes before the indicated cooking time. Then proceed to toss them in the pan with the freshly prepared sauce. You can also add a sprinkling of homemade bread crumbs toasted in evo oil to the individual dish. The best time to harvest glacial mint for a more intense aroma is from June to September, during the flowering period when the essential oils are most concentrated. However, the leaves can be harvested throughout the year, preferably in the morning.
